SWALLOW TALE OOLONG – Spring Harvest 2019
During the harvest of our first flush oolong the resident swallows put on an impressive flight performance sharing tales from faraway places. We were inspired and created a semi-oxidized oolong style tea. Leaves were hand plucked, withered, rolled and bruised, kill green pan roasted. Cooled and baked several times, the tea was then wok finished.

|Tasting Notes||A classic oolong with a delightful amber liquor; a lovely smooth cup with a warm buttery finish and notes of honey.|
|Temperature||Use 100ºC water (full boil) and pour over the large leaves.|
|Steep||Steep for 5 minutes. Re-steep many times for an exquisite taste journey.|
