MAPLE SMOKED GREEN
Inspired by a relentlessly cold and snowy West Coast Winter, I decided to make a tea born out of a true Canadian experience. Frost bitten leaves and stressed branches form the structure for this Japanese style hojicha green tea. Hand harvested and pan roasted, the leaves and twigs were then cold smoked with Big Leaf Maple chips.

|Temperature||Use slightly cooler water. 90ºC.|
|Steep||Steep covered for 5-8 minutes. Enjoy the aroma and your first sip. Re-steep 3 times.|
