The larger leaves from the tea plant – the souchong – are harvested and then processed into a black tea. The tea is roasted in bamboo baskets and heated over burning pine wood. The pine is what contributes to the extraordinary smoky flavor. Lapsang Souchong has gained great popularity outside of China. The notable smoky flavour makes it a wonderful ingredient in the kitchen. Aside from enjoying it by the cup, Lapsang makes amazing marinades, vinaigrettes, sauces and desserts.
The organic teas we import are artisanally farmed and crafted. They may change with each harvest season. The same tea harvested at a different time of year and processed by a different tea maker will vary slightly in flavour and finish.
