Rooibos is produced from a shrub, Aspalathus Linearis (also known as “red bush”), that is native to the Cedarberg region of South Africa. Once collected, the leaves are processed into tea. After harvest, the cut branches undergo an oxidation process similar to how black tea is made. This process brings out the red colour and enhances the flavour. Green Rooibos is processed much like green tea; it is not oxidized and therefore retains its greener, original colour. The flavour is milder and grassier.
